The flavors that you enjoy from your favorite baked-potato side dish are transformed into these Loaded Deviled Egg Bites, which are then placed on top of a plump and flavorful Eggland’s Best Egg.
We like these bites because they go beyond the typical presentation of deviled eggs without adding any of the unnecessary fussiness that is typically associated with them: Simply create a sandwich-like container for our creamy yolk filling and tasty toppings by cutting thick wedges out of each egg. Your sandwich will be ready to go.
Ingredients
- 8 Eggland’s Best Eggs
- 3/4 tsp. seasoned salt
- 1 Tbsp. mayonnaise
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 3 potato chips, broken in half
- 1/4 c. shredded cheddar cheese
- 2 Tbsp. sour cream
- 2 Tbsp. chopped cooked bacon
- 1 Tbsp. chopped chives
Directions
Step 1
Create a boil in a large pot of water by heating it to a high temperature. After dropping the eggs in carefully, continue cooking them for nine to ten minutes, or until they reach a hard-boiled state.
When the eggs are done cooking, place them in an ice bath using a slotted spoon and wait for them to cool before peeling them.
Step 2
One-half of the hard-boiled eggs should be cut into a V-shaped wedge along the length of the egg using a paring knife. Use the seasoned salt to sprinkle on the eggs that have been cut.
Step 3
After separating the whites from the yolks of the wedges, they should be transferred to a small bowl, while the whites should be discarded. One of the remaining two whole eggs should be cut in half, the egg whites should be thrown away, and the yolks should be added to the bowl.
The yolks should be mashed, and then the mayonnaise should be whisked in. Finally, salt and pepper should be added to taste.
Step 4
A yolk filling should be carefully spooned into each of the cut eggs that have been seasoned. The dish should be garnished with chives, cheese, sour cream, and bacon. To serve, place a half of a potato chip into the yolk mixture of each egg, and then serve.
